Having the same issue. Average match rating and shots on goal conversion percentage is out of wack. Does EA even know about this?

Had the same issues till I figured out the trick. The game might have been programed to notice completed match rating. Play the full match, even after being subbed, don't sim, and it will register the actual player rating.
